For safekeeping : Oma approved chili aka Erin Stew

In a crockpot combine:

1 lb. ground beef very well browned (optional)
1 medium onion finely chopped and browned
1 medium zucchini halved lengthwise and cut into 1/2 inch pieces
1 each of coarsely chopped green, red & orange peppers
1 stalk thinly sliced celery
2 14.5 oz cans fire roasted tomatoes with juice
1 15 oz can black beans drained and rinsed
1 cup or so frozen corn niblets
1/2 500 ml jar of the salsa that Aaron likes (with the black beans and corn in it)
1/2 jar of that watery smokey chipotle salsa
Stingy palmful of dried cumin
Very generous palmful of Italian seasoning

Set the crockpot to desired time/temp. Ingredients will juice up, do not add extra liquid.

Serve hot topped with sour cream, shredded marble cheese and multigrain tortilla chips.
