Safe place for stuff I want to try.... pressed and altered

Chocolate & goat cheese mousse parfait /

Crumble :
6 apples, peeled & slices
1/2 c. maple syrup
1/2 c. ap flour
1/2 c. brown sugar
1/2 t. cinnamon
1/2 c. chopped pecans
1/2 c. butter

Fruit + nuts + maple syrup + flour + brown sugar + cinnamon in square baking dish + cubed butter
Bake 30-40 min

Mousse:
1 pkg gelatine
1/4 c. cold water
1 c. cream (15%)
2 c. whipping cream (35%)
1 vanilla bean
4 1/2 oz. white chocolate
200 g goat cheese (or cream cheese, I'd wager)

Cold water + gelatine in small bowl > whisk until foamy
Cream (15%) + vanilla in saucepan  > boil, turn off heat > + chocolate and melt
Boil, turn off heat  > + gelatine
Boil, turn off heat  > + cheese > cool
Whip whipping cream > fold in chocolate mixture ^

Divide among 6 glasses layering with crumble

Candied orange slices /

4 1/2 c. sugar, divided
4 c. water
3 cinnamon sticks
10 clementines
1/2 c. chocolate chips, melted -- semi sweet (or dark?)

In saucepan 4 c. water + 4 c. sugar + cinnamon sticks > cook to dissolve
+ 12 - 15 slices in syrup, simmer 40-50 mins > repeat
done when pith is soft and translucent
dry in 200 F oven
sprinkle with remaining sugar
cool
dip in melted chocolate

Mandarine custard cake /

1/2 c. mandarin juice
1 c. light cream or milk
2 T. unsalted butter
1/2 c. sugar
1 T. grated mandarin rind
2 t. grated ginger
3 eggs, separated
3 T. ap flour
3 T. cocoa powder
pinch salt
1 T. icing sugar

Juice in saucepan, reduce to 1/4 c. > cool
juice + cream > reserve
cream butter + sugar > + mandarin rind + egg yolk + egg yolk + egg yolk
flour + cocoa powder > alt. w/ cream mixture into ^
beat egg whites with salt to soft peaks > fold ^
divide between 4 ramekins
bake @ 350 for 18 - 20 mins until top is set -- centre will still be liquid
dust w/ icing sugar, serve hot
